Cinnamon Horchata Paletas

While summer may be technically over, it’s still quite warm at Cabo Chips HQ in southern California!

These creamy Horchata Paletas are a deliciously satisfying treat for summer or fall. Just like our churro chips, this smooth and spiced recipe is based off of traditional Mexican street food. One bite and you’ll be transferred to the streets of Baja!


1.5 cups rice milk (or almond milk)

1.5 cups full fat coconut milk

1 tablespoon coconut nectar or sweetener of juice (or more to taste)

2 teaspoons cinnamon

1 teaspoon lime juice

1 teaspoon vanilla extract

pinch of salt


Place all ingredients into a large bowl and mix until well combined. Pour mixture into popsicle molds and freeze until hard. Should make about 6 popsicles depending on your mold.
