Balsamic Glazed Grilled Watermelon
Barbequing and eating fresh fruits in the sunny summer weather is always a good idea! But have you ever thought of combining the two? Fresh juicy watermelon covered in lime juice then grilled to perfection is my new favorite summer time snack!
What you will need:
2 inch Watermelon
2 Tbs. Extra Virgin Olive Oil
Drizzle of Balsamic Glaze (to your liking)
1/2 Cup Cilantro
1 Tbs. Cotija Cheese for Saltines
What to do:
1. Preheat your grill to 350-400 degrees.
2. Brush both sides of watermelon quarters with olive oil and squeezes of lime juice.
3. Grill each side for about 1 minute.
4. Transfer each slice onto a plate; add balsamic glaze, cojita cheese, cilantro, lime and salt to taste.
5. Dig in!
