Homeade Chilaquiles AKA Breakfast Nachos

A truly authentic Mexican dish! Great for any meal, anytime! Topped with a plethora of tasty ingredients, this Mexican comfort food will be sure to satisfy.

Tip: Top it with an over-easy or scrambled egg to make them what I like to call “Breakfast Nachos".

Red Chile Sauce Ingredients 

5 Small Tomatoes

2 Ancho Chiles

1 Jalapeño Pepper

1 Small Onion  

2 Garlic Cloves

1 Tbsp. Vegetable oil 

1/2 Tsp. salt

Chile Sauce
Bring a small pot of water to a boil over high heat. Place ancho chilies in a frying pan and toast over medium heat until crispy for about 4 minutes. Transfer chilies into a glass bowl. Pour the boiling water over chilies and let them soak until soft, 8-10 minutes.

Drain chilies then place them into a food processor. Add Jalapeño, tomato, onion, garlic and vegetable oil to the chilies. Add salt and oil, blend until a smooth consistency.

Chilaquiles

Add 1 Tbsp of oil to a large sauté pan and bring to medium heat. Add red chile sauce and let cook for several minutes. Once the sauce is brought to heat add one bag of Original Flavor Cabo Chips. Gently turn over chips so that each chip is completely covered in sauce. Let cook for about 3 minutes. Let cool, add toppings and INDULDGE!
